Christmas Pancakes

  • 500ml milk
  • 1 egg
  • 1 Tbsp Grand Marnier orange liqueur
  • 2 tsp vanilla extract
  • 2 cups self-raising flour
  • 1 tsp mixed spice
  • ¼ tsp bicarbonate of soda
  • 1/3 cup caster sugar
  • 25g butter, melted
  • Canola cooking spray
  • Assorted Christmas cookie cutters
  • Ice cream, to serve
  • Maple syrup, to serve


Step 1
Preheat the barbecue, with the Q fry pan in, for direct cooking. Alternatively, if you have a hotplate for your barbecue, swap a grill for that prior to preheating

Step 2
While the barbecue is preheating, whisk the milk, egg, Grand Marnier and vanilla together in a jug until just combined.
In a separate bowl, mix the flour, mixed spice, bicarbonate of soda and sugar. Make a well in the centre of the dry mixture and add the milk mixture and melted butter. Whisk until well combined

Step 3
Once the barbecue is preheated, leave all burners on high.

Place the cookie cutters in the fry pan.

Spray the fry pan and cookie cutters with cooking spray to grease.

Step 4
For each pancake, spoon a couple of tablespoons worth of mixture in to the cookie cutter.  Make sure a gap is left between each pancake.

Step 5
Close the lid and cook the pancakes for 1 to 2 minutes.  Open the lid and flip the pancakes.

Cook for a further minute.

Serve the pancakes with ice cream and maple syrup.
