Preheat the barbecue for indirect cooking.
While the barbecue is preheating, remove the turkey from the fridge.
Dry the skin of the turkey with paper towel. Rub the skin with olive oil and season with salt and pepper.
Once the barbecue is preheated turn the centre burner off and turn the outside burners to medium.
To calculate the cooking time for turkey, allow for 20 minutes, plus an additional 20 minutes per kilo. For example, for a 5 kg turkey allow 20 minutes plus 5 x 20 minutes for a total of 120 minutes.
